I love, love, love this loaf.
I’ve been making it a lot lately because it’s a healthy snack when I’m ravenous. You can make it with sugar, but I like using honey because it’s much healthier and I love the taste.
1 cup dates
Half cup honey
1 cup boiling water
1 1/2 cup self raising flour
1/4 cup oats
2 teaspoons vanilla essence
1 teaspoon cinnamon
Preheat oven to 180 degrees Celcius and line a loaf tin with baking paper.
Blitz the dates in a food processor until chopped into small pieces. Put the chopped dates, honey, vanilla, cinnamon and butter in a bowl and pour over the boiling water.
Stir until the butter has melted and all ingredients are combined.
Add sifted flour and stir until combined, then add oats and stir through mixture.
Spoon the mixture into the tin and bake for about 30 minutes.
