Today is my dad’s birthday 🙂
He loves rum and raisin so I thought I’d made him some rum and raisin brownies.
4 tablespoons rum
220g chocolate (dark or milk)
1 cup brown sugar
1 teaspoon vanilla extract
1/2 cup plain flour
1/2 teaspoon baking powder
1/4 cup cocoa
icing sugar for dusting
Preheat the oven to 180°C and line a rectangular pan with baking paper.
Place the raisins and rum in a bowl and coat the raisins by gently stirring a few times. Set aside.
Place the chocolate and butter in a heat proof bowl and melt in a microwave in 30-second blasts, stirring in between. Once melted, add the brown sugar and stir. In a large bowl, whisk the eggs and vanilla, then add the chocolate mixture.
Sift in the flour, baking powder and cocoa and stir until well combined. Then stir in the rum and raisins.
Pour the mixture into the dish and bake for about 40 minutes.
Leave in dish to cool for about 10 minutes, before moving onto a wire rack. Wait until completely cooled before cutting, then dust with icing sugar.
