When life gives you lemons, you make…lemon curd.
My kind neighbours recently gave me a bag of lemons from their tree and I was left wondering what on earth to make with them.
As a massive fan of lemon meringue pie, I decided to try and make lemon curd and it was, easy peasy lemon squeezy.
With a delicious batch of lemon curd, the only thing left to do is dig in with a big, fat spoon.
1 egg, whisked
2 teaspoons lemon rind
1/4 cup (60ml) lemon juice
1/2 cup (100g) caster sugar
1. Combine the egg, butter, lemon rind and juice and sugar in a small saucepan over low heat.
2. Cook, stirring, for 5 minutes or until mixture boils and thickens.
3. Remove from heat and strain through a fine sieve into a clean bowl.
4. Cover with plastic wrap and place in the fridge to cool and thicken.
